Rice Cake - The typical dessert of Bologna

The rice cake, or torta degli addobbi, is a typical Bolognese dessert born many years ago and was prepared on the occasion of the decoration celebration. During this celebration it was prepared and offered to guests, each piece was cut like a diamonds and was skewered by a toothpick.

There is an official recipe deposited at the Bologna Chamber of Commerce, the one you find here is the one that my grandmother handed down to me, who in turn received it from her mother. It is not the original one but I like it much more!

Ingredients

  • milk – 1 litre
  • rice – 100 grams
  • candied citron – 100 grams
  • sweet almonds without skin – 100 grams
  • amaretto biscuits – 100 grams
  • sugar – 300 grams
  • 5 eggs

How to make the best Rice Cake

Boil the milk with the rice.

When the rice is cooked, add a little lemon peel.

Chop candied citron, almonds and amaretto biscuits.

When the rice is cold, add the sugar, the eggs whipped, the cedar, the almonds and the chopped amaretto biscuits.

Pour the mixture into a greased pan and bake in the oven at 180 ° for about twenty minutes, then bring the temperature to 150 ° and continue cooking for another 40-45 minutes.

Remove the cake and let it cool, then cut it into rhombuses and skewer each piece with a toothpick.
